7th Week Class/Homework





On a lighter note...a new recipe

I'll keep you all posted on what I decide to do about the blog....I agree with both sides and I just know there is a way to meet in the middle!

For now, On with life!! And a new recipe!

If you haven't checked out Our Best Bites (it's on my sidebar under recipe sites I love) then you need to do it right now!

This recipe came recommended by my friend Brook. And I took her recommendation as should all of you!

We love Chicken taquitos but sadly I usually buy them premade in the frozen section.

I gave these a try on Sunday night and everybody loved them. Even Addysen gobbled them up! Christopher would have liked them less crispy but other than that we found another winner!

Anything with cilantro and cumin is a winner in my book!

Baked Creamy Chicken Taquitos

1/3 C (3 oz) cream cheese- I used the whole 8 ounces and just added a pinch more of all the spices. I think I came out with about 10 or 12 taquitos.
1/4 C green salsa- I didn't add this because I don't really like it!
1T fresh lime juice
1/2 t cumin
1 t chili powder
1/2 t onion powder
1/4 t granulated garlic
3 T chopped cilantro
2 T sliced green onions
2 C shredded cooked chicken
1 C grated pepperjack cheese

small flour tortillas
kosher salt
cooking spray

Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray.

Heat cream cheese in the microwave for about 20-30 seconds so it's soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, onion powder and granulated garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.

You can prepare up to this step ahead of time. Just keep the mixture in the fridge.

Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking. It helps to place them between damp paper towels. Usually 20-30 seconds will do it. If you find yours are cracking when you roll them or are coming unrolled right away, just try heating them longer and try the paper towel thing.

Place 2-3 T of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges.
Then roll them up as tight as you can!
Place seam side down on baking sheet, spray with cooking spray, sprinkle with salt, and throw them in a 400 degrees oven for about 20 minutes.
Dip them in salsa, sour cream, and guacamole

Private?

So I've been tossing around the idea of going private. What are your thoughts. If you are private..well, I know most everyones reasons for going private.. But if you are open to the public what keeps you from going private?


I kinda feel like I take WAY too many pictures of my kids not to go private....on the other hand I've reconnected with so many people through my open blog.

The one about the cute girl and her new do...

If you come to our house on any given morning and ask Elodie how she wants her hair fixed she will immediately say either Half up/Half down OR Half up/Half Down braid. Sure she allows me to experiment and do other things with her hair but if she had her way it would be Half up/Half Down.

After seeing this do on this site, I knew we had a keeper!!! It's now Elodie's new favorite way to have her hair done!!



And of course we couldn't just take pictures of the hair!

POTD Challenge 9/20-9/26/2009

Sunday...Grandma and Grandpa Yarn were in town again. Before they left town Elodie and I skeefed some of Grandma's fingernail polish and gave ourselves twinner toes.


Monday Elodie had her dentist appointment where she scored an A+ for no cavities!!


Tuesday Addysen had her 18 month check up with shots. She is not even on the charts weighing in at 19.6 pounds and 31 and 1/2 inches long. Our pediatrician said she needed to be drinking more whole milk and she wanted to see her again in a month. If she hadn't gained any weight by the month mark we might have to go on pediasure. Which we did with Elodie and it made no difference!! I need to bring my Pediatrician to Barro's the next time we go. Then she will see how much pizza my girls eat and wont' question their petitness. We had the same experience with Elodie when she was the same age! We did the pediasure, we did the blood work, everything came back normal!


Wednesday- The girls enjoying a popsicle before bathtime


Thursday- Addysen is turning into a little mother. She is constantly wanting to feed, change, hold, and love on her babies. It's super cute! On this day I caught her changing her babies diaper and using the wipes to clean her up!


Friday- GNO for Audrey's birthday. We went to dinner and then went back to Audrey's to make a Halloween craft, which I will post about once the craft is done-still waiting on my vinyl order. Fun times!

Saturday- my loot from Kohl's. I spent $75 and saved $315!!! And the swimsuit? $5 for the whole thing! Woot! Woot! All the shoes were under $3 and all but 1 pair are Nike! The 2 little outfits on the far right...I got the onesie for 90 cents and the 2 piece red polka dot outfit for $1.90!! My brother and SIL just found out they are having a girl in March!! With those kinds of deals I can easily stock their closet! AND, the best part is this was BEFORE my 30% employee discount!!! The most expensive purchase was Christopher's $16 Nike socks!! Shame! Shame! Good Shopping Day!

First Day of Fall

The weather is changing slightly. I think it's cooler outside because I know it's suppose to be the first day of fall. A little mind trickery never hurt anyone.

Elodie said this morning that because today is the first day of fall she will finally be able to use the swings at recess. Up until today they have been too hot. Hopefully she isn't disappointed if the weather doesn't change overnight for her. I think she is getting her mothers hatred for Arizona summers!

I love Fall. ...

Fall makes me feel more crafty. I want to make a quilt, scrapbook, photograph a family in a huge pile of leaves, make a wreath, bake an apple pie....

I desperately need to live in a state where the leaves change colors and you need to wear long sleeves to the pumpkin patch!

Until then, I will display my fake fall leaves on my dining room table, pull out my pumpkins, buy Halloween candy, make caramel popcorn (I've done this twice), and enjoy the fact that heat advisories are a thing of the summer and the best part about living in Arizona is around the corner!

Even if the leaves don't change colors until December and it still looks like summer outside.

No cavities

Elodie had her dentist check up today. She did great and has no cavaties. I forgot to bring my camera to the dentist office so when we got home I asked Elodie if we could go outside and take some pictures of her "princess teeth" as the dentist called them. She loved the idea and honestly wouldn't you rather see this one than ones of Elodie in a dentist chair?

POTD Challenge 9/13-9/19/2009

This week...

We had lunch with friends...it feels so weird to be doing playdates without Elodie. It hasn't stopped us from doing playdates-heck! I'm sure we will do playdates when ALL our kids are in school!

I am hyperventilating right now!

OVER GROCERIES! Yes, yesterday I was excited about reorganizing my already organized pantry...today I am giddy over how much I spent at the grocery store! Clearly, if I ever won a year supply of food storage I would be over the moon!

I have always been very conscious about how much I spend at the grocery store. I clipped coupons and price matched but didn't really go beyond that. Recently I joined couponsense. I have a few friends who had signed up and were saving extreme amounts of money and building their year supply super quick. Obviously the words save and year supply peaked my interest. So I joined.

And after being a member only a few days I have rocked some serious sales. And the best part is I'm only a beginner so it's got to get better from here on out! Yesterday I went to Safeway and bought 4 boxes of fruit snacks, 4 boxes of cereal, 4 boxes of granola bars, a huge packs of chicken thighs, and grapes and spent $15. I thought this was pretty good but new I could do better! And I did!

Today I went back to Safeway and bought all of this..


4 boxes of ritz crackers
2 boxes of ritz crackerfuls
2 boxes of capri suns
bananas
and another bag of grapes-because after one day the girls had already polished off the ones I bought yesterday!

My total came out to $4.98 and I saved $30!!! I saved 87%!!!! I seriously skipped out of the store and couldn't wait to call my friend Melissa!

I guess I can officially join the "Molly Mormon" group! I don't think there is one but I wouldn't be surprised!

5th Week Class/Homework

Elodie got her first progress report this week! She is doing fabulous although I'm going to need to ask her teacher about that Satisfactory in Music. Most of you have heard her sing Taylor Swift!

POTD Challenge 9/6-9/12/2009

Almost through the Big Dirty...

All the laundry I got to tackle when we got home on Monday-I think I ended up with 7 loads.I lost track after 4 though!

Fundraisers are starting already...anybody want to buy some cookies from Elodie?

I finally gave in and spent $80 on fingerprints so I can volunteer in Elodie's class. If you didn't know, Elodie's school requires fingerprints and background checks done on everyone who wants to volunteer. The total cost was $80! UGH! I understand the point but everyone I've talked to who isn't at Elodie's school has never had to fork out that much money to volunteer! Now that it's done I'm excited to get more involved and Elodie is super thrilled to have me in the classroom. Should be fun. Even if I could have spent $80 on a lot of other things!

4th week class/homework




Elodie's teacher is very strict about names on papers. If you don't put your name on your paper, you get a 2 minute penalty at recess. A little much but important. Anyway, as you can see, Elodie forgot her name on her paper and recieved a 2 minute time out at recess. When I asked her about it and how it made her feel she told me "It was fine Mom. I like to sit in the shade anyway!" Apparently, the 2 minute time out was no time out for Elodie!
